Jerusalem Artichockes (Helianthus tuberosus)

Not from Jerusalem and not an artichoke.  Actually, part of the sunflower family, this plant probably gets its name from the romance language word "girasol" which means sunflower.   These relatives of sunflowers grow vigorously and supposedly have smallish yellow flowers.  The roots are edible and unlike anything I've eaten before.  The flesh of the root looks like ginger, but can take the place of potatoes on the table.  Oil, salt and pepper on a cookie sheet at 350 until soft.  So good!
